Welcome Back to School!

Dear Families,

We hope you all had a wonderful winter break filled with joy and relaxation! As we return to school this week, it’s important for us to get back into our routines and set the tone for a successful remainder of the school year.

This week, we will be focusing on our PBIS (Positive Behavioral Interventions and Supports) walk to remind students of our Tiger expectations. This initiative helps reinforce our positive school culture and expectations, ensuring that all students feel safe, respected, and ready to learn.

What do we do when it’s cold here at Tully’s Garden? Well, we stay inside and bake bread of course! December’s ‘Chef in the Garden’ ingredient theme was White Sonora Wheat. After mixing the dough, many of the students made geometric shapes for their crackers and got to try Za’atar spice on the crackers – while I wasn’t surprised that these fresh baked crackers were a hit with the students, it was neat to see that most students enjoyed the Za’atar herb and spice mixture as well. There is a quite a bit of prep and clean-up with baking, but this fairly simple recipe is fun for the students as they are able to assist in each step and form their own shapes with the dough. Here’s the recipe in case you too find yourself stuck inside during the winter chill:

• 1 ½ cups wheat
• ½ tsp sea salt
• ½ tsp dry yeast
• 2 tbspn olive oil
• 2/3 cup water
• optional: Za’atar seasoning

1. Combine the flours, salt, yeast, olive oil and warm water in a large bowl and mix together to form a ball. 2
2. Turn out the dough onto a lightly floured work surface and knead for 5 minutes until smooth and elastic.
3. Place the ball of dough into a large bowl and cover with a tea towel. Proof for 1-2 hours at room temperature (or up to 18 hours in the fridge) until the dough has doubled in size.
4. Preheat the oven to 425 degrees.
5. Line two baking sheets with parchment paper.
6. Roll the dough into a 15in square.
7. Cut out shapes as desired.
8. Cook for 10 minutes or until golden.
9. Remove and allow to cool (they will crip as they cool).
