RECIPES & TIPS
Zucchini
It's that time in the season when zucchini is abundant. It's the perfect time to make zucchini bread, zucchini bar cookies, zucchini fritters. You can even shred zucchini and freeze it for making fresh zucchini baked goods in January! This week, a friend of mine sent me a recipe that we tried for dinner and it was tremendous! Check it out below.
Zucchini Pasta
Set oven to 400 degrees and place 1 container of grape tomatoes in a baking dish. Drizzle with 2 TBSP olive oil, and season with minced garlic, salt, pepper, basil, and oregano to taste. Stir well and place in the oven for 30-35 minutes. When done, smash to crush the tomatoes into a chunky sauce.
While tomatoes are cooking, cut 3 medium zucchini into flat pieces. Salt each piece and let sit for 30 minutes. Drain off water and wipe zucchini dry with paper towel. Slice the zucchini into thin strips. In a hot saute pan (medium-high), cook zucchini until they are turning golden brown, about 8-10 minutes. Season with salt, pepper, and minced garlic. Chop fresh basil. Serve a portion of the zucchini "noodles" with the tomato sauce topped with fresh basil.
While this is called 'Zucchini Pasta,' we still had some traditional pasta as well, as you may notice in the photo, but it turned out we didn't actually need it! The combo of the fresh tomatoes, herbs, and sauted zucchini was satisying all on its own.
Lemon Balm
Lemon balm (Melissa officinalis) is a member of the mint family, along with some of our other favorite herbs like basil, lavender, oregano, and thyme. The translation of the word 'Melissa' in Greek is 'honeybee,' aptly named since lemon balm is a favorite of our pollinating friends. The use of lemon balm is recorded as far back as 300 BCE, where it was referred to as “honey leaf” by Greek scholar, Theophrastus. While probably not good for today's carpets, during the Tudor period, lemon balm was often scattered on floors to freshen rooms due to it's pleasant scent. You can even crush the leaves and rub them on your skin as a mosquito deterrent.
Leeks
Several of you had leek questions last week and I didn't include any leek ideas in that email. So, this week I remedied that...From the same family as the onion but with a typically milder flavor, leeks can be used in all manner of savory pies, soups, stews, and casseroles. They have a delicate, sweet flavour and become delightfully soft when cooked low and slow. Leeks have been cultivated for over 4,000 years and were highly prized by ancient civilizations such as the Egyptians and Romans.
Turnips
Did you know that people have been cultivating turnips for thousands of years? In the days of the Roman Empire, Romans saved turnip roots to throw at people they didn't like. (We absolutely think you should eat your turnips and avoid the urge to throw them at anyone. Seems like a waste of a good root veggie to toss them at your annoying neighbor!) Early European colonists brought turnips to North America. They have been widely cultivated here ever since.
