The three main are: Vitamins, Minerals and Carbohydrates. There are different Vitamins that are with such as...
Vitamin C which are dark leafy greens such as spinach, kale, etc.
Vitamin A which are yellow & green vegetables such as squash, carrots, sweet potatoes, etc.
Vitamin B: peas, beans, etc.
But there are also other vitamin like Vitamin D and E. There are also Minerals such as Iron which also is with dark leafy greens such as spinach and kale (along with the Vitamin C).
More Important Information
Some random information about Nutrients and Information is, raw veggies have the more nutrients. Another interesting fact would be that you aren't suppose to soak the veggies/fruit before you use them. Making sure the put rinse them off and not soak them. The less water the better because it keeps the nutrients, the more water that you use the more nutrients that you lose.
Also if you want to keep the nutrients in them but you what them hot then you should steam them, but if you cook them then you lose nutrients and color.
