- Butter is 20% water. You may have to use your math skills to convert a recipe using butter!
- Leave 3” open space between pans and 3” from the sides of the oven.
- Use cooling racks to flip the cake. Cool the cake for 15 minutes in the pan and an hour after the cake comes out of the pan.

- Creaming method- Have all ingredients at room temperature (65-70 degrees).

- If making a stacked cake weight batter for each pan on a scale.
- Use a chilled bowl for making whipping cream.
- 30 grams= 1 oz
- Cake flour is finely ground and there is 8 grams of protein per cup.
- All-purpose flour has 10-12 grams of protein per cup.
- The recommended pan is a heavy, rolled aluminum pan with a dull matte finish.

What Do the Numbers Mean?
Calories= ENERGY Most people need about 2000 calories a day.
Calorie requirements vary with age, gender and activity level.
There are Six Major Nutrients
Proteins, carbohydrate, vitamins, minerals, water, and fat
Calories are in which three nutrients?
FAT = 9 calories per gram CARBOHYDRATES = 4 calories per gram PROTEINS= 4 calories per gram
Recommended amounts on 2000 calorie diet
Fat = 65 grams of fat or less a day.
Carbohydrates 300 grams or less a day.
Protein= 50 grams a day.
Ingredients
3 chicken tenders
1 Tbsp oil
¼ tsp oregano
½ tsp garlic salt
1 Tbsp lemon juice
½ cup cheddar cheese
½ cup pepper jack cheese
1 tortilla per person
Salsa (optional per person)
Directions
______1. Heat the oil in the skillet over medium heat.
______2. As the chicken is cooking, cut up the chicken into bite size pieces with the spatula
______3. When there is no pink in the center of the chicken, add the oregano, garlic salt and
lemon juice to the chicken.
______4. Grate the cheese.
______5. On a serving platter place two tortillas side by side. Spread the chicken on the
tortillas.
______6. Place the cheese over the chicken and top each with another tortilla.
______7. Microwave for 1 minute or until the cheese is melted.
______8. Cut the tortillas into fourths or eighths using the cutting board and the pizza cutter.
______9. Serve from the platter. If desired, serve with salsa.
