RECIPES & TIPS
Chamomile
Chamomile (Chamaemelum nobile) is also known as Roman chamomile, true chamomile, garden chamomile, ground apple, sweet chamomile, or low chamomile. One of the oldest known medicinal herbs, and beloved by sleepytime tea drinkers, this pretty flower is actually toxic to dogs, cats, and horses. You, on the other hand, can enjoy it in many ways...
Add chamomile (and/or lavender) blossoms to your favorite shortbread cookie recipe.
Throw a handful into a smoothie or soup.
Use chamomile sprigs or blossoms to decorate cakes & baked good.
Add blossoms to ice cube trays to add a splash of color to your beverages.
Sprinkle your salad with fresh chamomile blossoms.
Use it in jams, candies, salad dressings, homemade, ice cream, and cocktails.
Get creative and have fun!
Fresh Chamomile Tea
If you're wondering how to use fresh chamomile, a herbal tea is probably one of the first things you think of trying. The best thing about making your own is that you can make it as strong or weak as you like. A general guide is about a tablespoon of fresh chamomile per cup (150ml) but you can use more if you want, just don’t over do it.
Lavender
Lavender can be used fresh, to brighten up a room, share a lovely fragrance, or to add a special pop of color and flavor to a recipe. Want to dry your lavender? Hang it upside down in a dark, warm spot. Protect drying lavender from sunlight to retain best color, and place a sheet beneath the bundles to catch any buds or blooms that might fall. You should have dried lavender in about seven to 10 days, depending on humidity.
Zucchini
Botanically speaking, a zucchini (a type of squash) is definitely a fruit. In the culinary world, this favorite sign of summer is definitely a vegetable. But, fruit or veg, does it really matter? Any produce item that can be used to make such delicious treats as fried zucchini and zucchini lasagna rollups as well as zucchini bread and zucchini bar cookies is an absolute marvel. Plus, you can even eat this plant's gorgeous blossoms!
Dragon Suhyo Cucumbers
Delicious and tender, these slicing cucumbers are a joy to eat. Ripening earlier than others in their class, Dragon Suhyo Cucumbers have a sweet, slightly floral flavor. These cucumbers are a favorite for pickling as well as enjoying in sandwiches, salads, and veggie trays. Cut the ripe fruit into cubes and add to soup for an interesting and fresh twist. They work especially well for pickling thanks to their crisp texture and small seed cavity.
Prospect the Pantry recommends this easy cucumber salad:
After slicing cucumbers, I lightly salt them, park a few ice cubes on top, and let them sit on the counter for about 10 minutes. This draws out a little liquid but lightly flavors and crisps them. Sprinkled with a little white wine vinegar and seasoned with tarragon or dill, and you’re good to go. I topped mine with Greek yogurt flavored with finely minced scallions, dill and parsley.
Patty Pan Squash
Patty pan is a type of summer squash that's meant to be eaten while the skin is still soft and thin - there's no need to peel it. Its flying saucer-like shape is very distinctive, making it easy to recognize in the garden or in the kitchen! This squash tastes much like zucchini, though the texture is a bit drier. Use patty pans in any recipe that calls for zucchini. One fancy looking but easy to prepare way to enjoy this cute squash is stuffed with beans, rice, and shredded chicken and roasted in the oven.
A Peek Into CSA 2024
💨 Picking Up Your Share is a Breeze! 🪁
Between 4-7pm, enter through the sliding glass doors and you'll see all the shares ready on tables in the Great Room. Unless we have bonus items, you'll be able to just grab a basket and go! Then, on your next CSA day, please bring your empty basket back in order to swap it for a full one. That way we always have enough baskets here, ready to be filled each week.
