What I'm Doing This Month
October is traditionally known as Breast Cancer Awareness month, but I like to focus on PREVENTION.
Awareness… I know about it.
Prevention… I’m taking action to change outcomes.
Did you know... 1 in 8 US women will be diagnosed with breast cancer in their lifetime?
In April of 2020, I had an early mammogram due to breast pain. This was followed with an ultrasound due to some findings on the mammogram. This was followed by a biopsy of a spot in my right breast. It was a nerve-racking couple of weeks. Thankfully, the biopsy came back just fine + I was monitored every 6 months for a year or so to make sure there were no changes. Many women aren't so lucky + I know far too many who have fought (or succumbed) to breast cancer.
Plus... I'll be donating 10% of my sales this month to Breast Cancer Prevention Partners, an organization dedicated to exposing the causes of breast cancer + helping women make lifestyle changes that reduce their risk!. Last October, I was able to donate over $200. I would love to double that number this year!

What I'm Cooking This Month:
Loaded Baked Potato Soup
INGREDIENTS
12 slices bacon, diced
1 yellow onion, diced
2 celery stalks, diced
2 carrots, diced
2 1/2 pounds russet potatoes, peeled and diced
2 tablespoons flour
5 cups vegetable broth
1 cup Alfredo Extraordinaire
8 ounces sour cream
1/4 cup chopped chives
1/2 cup shredded cheddar cheese
DIRECTIONS
Heat a large nonstick pot over medium heat. Add bacon and cook until crispy, about 10-15 minutes. Use a slotted spoon to remove cooked bacon; transfer to a paper-towel lined plate.
Add onion, celery, carrots, and potatoes to the pot and cook for 5-7 minutes.
Add flour and cook for an additional 2 minutes.
Add vegetable broth and Alfredo Extraordinaire to the pot and bring to a simmer. Cook for 10-15 minutes or until the vegetables are tender.
Mash the mixture with a potato masher until potatoes thicken the soup. Remove soup from heat and stir in sour cream.
Serve with crispy bacon, chives, and cheddar cheese.
