HANDS-ON CHEESEMAKING 'DAIRY IN THE CLASSROOM' EXPERIENCE
The Shelburne Farms 'Dairy in the Classroom' teacher appeared again in Ms. Borst's and Emmons' classrooms. Her main goal was to have the students make and taste homemade cheese. To accomplish this goal she had students take turns stirring a gallon of milk as it heated up until it became warm enough to begin steaming. At this point, the instructor added vinegar to the hot milk. That addition made the milk curdle immediately. The curds and whey were poured through cheese cloth where they were separated from each other. Then the curds were squeezed in the cheese cloth to remove excess moisture. What resulted a clump of cheese that looked a little like scrambled eggs. The instructor added salt and then scooped samples of cheese onto ritz-crackers for students to sample. Most of their responses to the taste and consistency were positive and enthusiastic.
While students waited for the milk to heat, the instructor taught students about other ruminants, particularly goats. She also read them a funny farm animal story involving cows and goats among other life forms.

THIS SUMMER, READ BOOKS TO WIN ACCESS AND PRIZES AT THE CHAMPLAIN VALLEY FAIR
The Champlain Valley Fair has partnered with Libraries around the state to promote reading. St. Albans Free Library is one of those librarys. Students who read three books over the summer can qualify for a free 1-day pass to the fair, a coupon for a $5 ice cream, and a free book.
