COOKING AND BAKING
FERMENTED FOODS ARE FUN
Not sure how or why to add fermented foods to your diet? this class is for you! participants will be able to taste a variety of fermented foods including kombucha, sauerkraut and kimchi. We will also discuss the health benefits of fermented foods and how to make delicious, healthy condiments and snacks. participants will take home a packet of recipes, a jar of sauerkraut and a jar of lacto-fermented pickled vegetables. (Please bring a quart and pint size jar or tupperware)

Scones can be sweet or savory, perfect with coffee and tea, as a snack or really, anytime of the day! BAKING BISCOTTI
It's cookie season! Great for gifts, crunchy & perfect for dipping, biscotti are a delightful Italian treat! But don't be scared of this twice baked crispy cookie. In this class, we'll cover how to customize biscotti and bake them perfectly every time. We'll be baking in class, so be sure to bring your apron! Participants will leave with a tray of biscotti, and a packet of recipes and info.

ALL THINGS CINNAMON
Learn how to make soft, buttery and delicious brioche dough that you can roll into beautiful pinwheels of cinnamon and sugar in this hands-on class. Learn all the tips and tricks to making delicious overnight brioche cinnamon rolls, cinnamon swirl bread, and other brioche dough based delights. Participants will get to taste delectable treats! Take home 9 cinnamon buns (with icing) to bake the next day as well as a packet of recipes and info!

VIBRATIONAL NUTRITION: EATING FOR EMOTIONAL & MENTAL WELLBEING - OCT
SOBA NOODLES AND KABOCHA SQUASH - IN THE FLOW SOUP
Most of us are familiar with the physical health benefits of fruits, vegetables, meats, herbs, spices, and their nutritional effects on the human body. It is well known, for example, that turmeric is a powerful anti-inflammatory and carrots significantly improve eyesight, but what about the vibrational benefits of foods? How does our diet affect the energy body and our emotional, mental and spiritual states?
In this comprehensive class, you will explore how each featured wholefood affects you on multiple levels: with interpretations of their energetic stories and physical properties. Instructor Candice Covington, author of the book Vibrational Nutrition, explores how to intuitively select foods and food combinations to reinforce your energy patterns, support you in any endeavor, and provide nutrition for body, mind and spirit. Participants will taste a variety of wholefoods, take home the featured dish, and leave with an in-depth hand out with fun and insightful information, including the recipe!

VIBRATIONAL NUTRITION: EATING FOR EMOTIONAL & MENTAL WELLBEING - NOV
EATING THE MOON - FOLLOW YOUR BODIES NATURAL CYCLES
All Wisdom traditions teach that if you allow your body rhythms to synchronize with nature - you feel a whole lot better! In this comprehensive class, you will explore your natural cycles: the Full Moon (a fulfilled abundant state), the Waning Moon (the art of letting go), the Dark Moon (deep rest and contemplation) and the Waxing Moon (setting goals and action).
You will explore how each featured wholefood creates the above states of being: with interpretations of their energetic stories and physical properties. Instructor Candice Covington explores this exciting and rich concept through an Ayurvedic lens and how eating with the seasons and your own internal body rhythms - allows you to tap into your most vital self! This includes a quiz to allow you to know what cycle you are currently in.

QUILTING WITH NAN HAGE
INTERMEDIATE/ADVANCED QUILT - STAR BASICS
Learn "Quick" techniques used to make triangles which can be sewn together with other shapes to create assorted star designs. Example Friendship Star to the intricate Martha Washington Star. The finished blocks will make a sampler lap-size quilt. First class covers material, design and shopping for supplies with Instructor Nan Hage.

ARTS, CRAFTS AND PAINTING
STAINED GLASS FOR BEGINNERS
Join us for an opportunity to create your very own stained glass Suncatcher! In this 3 week workshop, you will learn the copper foil method of stained glass as you cut, grind, foil and solder your creation. There will be a variety of beginner friendly patterns for you to choose from. No experience is required, however a certain amount of hand strength is required to cut glass. (If you have any concerns, please contact us) Booklet summarizing what you learned, and how to take care of your Suncatcher is provided. Students are required to be 18+.

We will be exploring the wonderful shapes of Fall Leaves and Squash. Combining these shapes will make some lovely contrasts for this autumn themed drawing. class will talk about design, texture and mark making. Minimum supplies are pencil and paper. If you would like to work in color, that is fine. Please bring supplies. Melissa will provide leaves and squash. You can bring your own if you like.

OIL PAINTING BOB ROSS STYLE WITH JUDY STUBB
De-stress and relax. Offered 1 Friday per month at the Gladstone Community Center, Judy Stubb, certified Bob Ross instructor will start you with a blank canvas; and help you leave with a completed masterpiece in just 3-4 hours! This Wet-on-Wet Technique is a very simple, easy to follow method anyone from beginners to seasoned painters can master.
Classes are casual, fun, and conducted in an easy step-by-step process. Judy shows up armed with easels, canvas, paints, brushes, palettes, etc. - everything necessary to complete your painting.

STAINED GLASS HOLIDAY ORNAMENT WORKSHOP
Join us for a festive and creative experience! Embrace the holiday spirit as we guide you through the art of crafting beautiful stained glass ornaments. Whether you're a beginner or have some experience with stained glass, this workshop is designed to inspire and delight.
In this hands-on session 1 day session, you will create up to three of your own unique holiday ornaments to cherish or gift.
No prior experience is necessary and all materials and tools will be provided. A certain amount of hand strength is required to cut glass. If you have any concerns about this, please contact us prior to reserving your spot. Students are required to be 18+

FOREST THERAPY WALK
Inspired by the Japanese practice of Shinrin-yoku (translated as “forest bathing”), Forest Therapy walks are designed to encourage us to slow down, focus on our senses, and experience the healing properties of forests and other natural areas. These are slow, gentle walks appropriate for almost any fitness level. We will meet at the Webster Rd entrance to the Gladstone Nature Park, rain or shine. There will be a light snack and you will receive more details by email before the walk.

METEOROLOGY SERIES
Learn about our different weather patterns in 3 seperate classes. Each class is focused on a specific weather pattern. Class is instructed by Portland Meteorologist and CCC Faculty member in the Fire Science Dept, John Saltenberger.

LARGE SCALE ATMOSPHERIC FLOW PATTERNS AND MOISTURE SOURCES
This lesson will describe the large scale air circulations around the globe, including the jet stream, large scale pressure pattern circulations, weather fronts, and movement of moisture. How all of these can affect weather across different geographic regions will be illustrated. Particular emphasis will be placed on wind patterns and moisture movement for the west coast of North America. Free demonstration software for PCs for experimentation with winds and pressure patterns will be distributed to students. Weather websites with wind animations will be provided.

CLOUD TYPES
This lesson will describe the mechanisms required for formation of clouds and identify different cloud categories as well individual cloud types within each category. Interpretation of how different cloud types can indicate weather changes will be addressed. A cloud chart will be provided to students.

THUNDERSTORMS AND LIGHTNING
This lesson will describe the mechanisms required for formation of cumulo-nimbus clouds and generation of lightning. Storm effects and thunderstorm safety will be addressed, including severe storms. The instructor will use video and graphic animation to help describe and better illustrate the key points in the lesson. A glossy handout on thunderstorms and lightning will be provided to students.

Through this one day workshop, attendees will be educated on the entire home buying process from start to finish. The classroom training offers interactive discussion with the industry experts who will be able to answer any real estate or mortgage questions. What if I request a refund?
If you enroll in an ongoing class (not a one time class) and you feel it is not for you after trying the first one, we will issue you a full refund. For one time classes, cancellation must be received 48 hours prior to the class beginning. (Supply fees may not be refunded if not cancelled 1 week prior to class starting)
Classes cancelled due to extreme weather will not be refunded.
