ADVISING ORACLE
November 2021
Advising Offices Thank their Teams this Holiday Season!
Franklin Lower-Division Advising Office
Located on the 3rd Floor of Brooks Hall, Franklin's lower-division advising office consists of 15 of the most intelligent, empathetic, warm-hearted, generous, funny, caring advisors to have ever existed. Come by Brooks any day and you're likely to see homemade seasonal decorations in the halls and front office, and be treated to some kind of homemade dessert.
Franklin advisors pride themselves on keeping things interesting; hobbies/side-jobs of those in our office include professional baking and cake decorating, beekeeping, broom-making, music directing, guitar playing, acting, screenwriting, novel writing, woodworking, teaching, ceramics, world travel, fiber arts, etc... We don't just advise the liberal arts and sciences, we live it, as evidenced by all the advisor-created items in the photo. Discussions in the office are always insightful and thought-provoking, and disagreements rare but always respectful. You couldn't ask for a better group of people to be forced to spend every day around.

CAES gives Thanks!
Every so often, when we’re telling each other how grateful we are to work together, I say something like, “I know this will all change someday, so I’m trying to soak it up as much as I can!” Then we’re blessed with more time together or new additions that make our team even stronger, and I wonder, how is this possible? (Quick, somebody knock on wood.) To Afton, Devin, Mary, Renay, Kelsey, and Whitney, thank you for your dedication, your trust, the laughs, the hugs (real and virtual), and your generosity to students and to each other. Happy Thanksgiving!

MFECOE: Brennen Salmon thanks Office of Undergraduate Advising Kinesiology Advisors
I would not have made it through this semester without these incredible people so I want to highlight each of them individually.
Teresa McClure - Teresa has significant administrative responsibilities with our Health & Physical Education major yet she navigates these responsibilities with poise. She has displayed attention to detail and a positive attitude throughout Fall 2021. Teresa is always willing to take a solutions-oriented perspective which makes her an outstanding academic advisor.
Julian Williams - Julian stepped into a new Senior Advisor role this semester and has transitioned seamlessly. His leadership, expertise, and relationships within the Sport Management department have shined this Fall. Julian is a strong role model for his students and his peers.
Lauren Flowers - Every semester, Lauren finds a way to elevate her advising practices and she is always the first to volunteer to meet various needs within our unit. She never settles or believes she has arrived as a professional which shows up in her work with students. Lauren's care for students and above-and-beyond approach to advising is unmatched.
Kalli Drake - Kalli is the newest member of our advising team and she was faced with a large caseload of students to advise before the start of registration. Kalli has passed this "test" with flying colors by showing up to work every day with a positive attitude and a desire to learn. Kalli has already displayed a unique ability to connect with and guide the students she serves.
Jade May - Jade had her one-year advising anniversary this Fall! Jade is always willing to provide support to her team wherever it is needed - even when it adds more work to her plate. She is reliable and detail-oriented in her service of students but never sacrifices compassion for the sake of efficiency.

College of Engineering Advisor Spotlight
Dagmar Nelson is an outstanding advisor in the College of Engineering. She is a veteran advisor for the college and her students always sing her praises. Right before registration season she unexpectedly lost her dog, Tessa. Through her loss Dagmar remained dedicated to her students, ensuring they had everything they needed even while she was going through personal grief. We are incredibly grateful to have Dagmar on our advising team!
-Amber Juncker
The Exploratory Center thanks their team!

COZY AUTUMN WILD RICE SOUP - Coconut Milk is a MUST!
prep time: 15 minutes (lies)
cook time: 45 minutes
total time: 1 hour
yield: 8 servings
This Cozy Autumn Wild Rice Soup features fresh seasonal produce, hearty wild rice, and a zesty creamy broth.
INGREDIENTS
6 cups vegetable stock (or chicken stock)
1 cup uncooked wild rice*
8 ounces baby bella mushrooms, sliced
4 cloves garlic, minced
2 medium carrots, diced
2 ribs celery, diced
1 large (about 1 pound) sweet potato, peeled and diced
1 small white onion, peeled and diced
1 bay leaf
1 1/2 tablespoon Old Bay seasoning (I used cajun seasoning)
1 (14-ounce) can unsweetened coconut milk (or see cream sauce option on website)
2 large handfuls of kale, roughly chopped with thick stems removed
fine sea salt and freshly-cracked black pepper
STOVETOP METHOD:
Sauté the veggies. Heat (an extra) 1 tablespoon butter or olive oil in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until soft and translucent. Stir in the garlic and cook for an additional 1-2 minutes, stirring occasionally, until fragrant.
Add base ingredients. Add in the vegetable stock, wild rice, mushrooms, carrots, celery, sweet potato, bay leaf and Old Bay seasoning. Stir to combine.
Simmer. Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover and simmer for 30 to 40 minutes until the rice is tender, stirring occasionally.
Add final ingredients. Add the coconut milk and kale to the soup and stir gently until combined. Taste and season with salt and pepper (plus any extra Old Bay seasoning, if you would like) as needed.
Serve. Serve warm and enjoy!

Leftover Thanksgiving Turkey Jambalaya (from a New Orleans native- Kathryn Pollett)
Ingredients:
½-1 lb of andouille sausage sliced
1 tablespoon butter
1 cup chopped yellow onion
1 cup chopped green onion
1 cup chopped green bell pepper
3 garlic cloves, minced
1 bay leaf
½ teaspoon thyme
2 cups of long-grain rice
2 tablespoons of tomato paste
1 can of diced tomatoes (liquid included)
½ cup chopped celery
¼ cup chopped parsley
1 teaspoon salt
½ teaspoon black pepper
Leftover cooked turkey cut into pieces (or chicken)
Cayenne to taste (optional)
Directions:
In a 4 quart heavy pot, sauté sausage in butter until firm and remove sausage with slotted spoon. Leave grease and butter in pot. Add onions, green onions, green pepper, garlic, bay leaf, thyme, and sauté for about 5 minutes. Add rice and sauté for about 3 minutes, stirring constantly. Add tomato paste and cook for about 3 minutes. Add sausage, tomatoes (with liquid), celery, parsley, salt, pepper, and 3-4 cups of water. Bring to a boil, reduce heat, cover and slowly cook rice. Occasionally stir until rice is done (about 12-15 minutes).
Transfer to a shallow 4 quart baking dish and stir in leftover turkey pieces. Place uncovered in a preheated oven and bake at 350 for about 15-20 minutes.
