Off to a Great 2023-2024 School Year!
As part of our continuing efforts to provide high-quality, nutritiously sound, good-tasting food and excellent service, Assistant Director of District Support, Ray Meyer, presented a Food Service Training to our staff prior to the start of the current school year. Food service employees had the opportunity to learn more about nutrient requirements, food presentation, food safety and so much more!
2023 Thanksgiving Luncheons!
RCSD schools celebrated Thanksgiving on Thursday, November 16th! Thanksgiving meals, as well as some fun & creative activities made this holiday even more special for our students and staff!
📢New Menu Item: Chicken, Salsa Verde with Cheese Tamales!
Our food service department is always looking to bring delicious and nutritious food options that meet calorie and nutrient requirements to our students! Stay tuned for new menu offerings!
Tamales are more commonly made from corn-based dough (masa), but they can also be made from other root vegetables such as yucca or plantains. There are many filings options; from chicken, beef to beans and vegetables. We're excited to offer tamales in our lunch menu! Don't forget to add a fruit or vegetable (or better yet both!) to your lunch. Enjoy!

🧑🍳Cooking Corner: Harvest Vegetable Salad 🥗
Ingredients
- 2 cups romaine lettuce (washed)
- 1 cup cilantro leaves (washed)
- 1 cup parsnips (peeled)
- 1 cup carrots (peeled)
- 1 cup turnips (peeled)
- 1/4 cup lime juice
- 1/2 teaspoon lime zest (grated)
- 1 teaspoon sugar
- 1/4 teaspoon chili powder
- 1 tablespoon olive oil
Directions
- Wash hands with soap and water.
- Combine romaine lettuce and cilantro, and divide onto four plates.
- Place parsnips, carrots, and turnips into 1 quart of boiling water. Return water to a simmer, cook vegetables for 2 minutes. Strain into a colander.
- Mix ingredients for the dressing right before use.
- Place hot vegetables on top of greens and top with homemade dressing.

FFVP Featured Vegetable: Candy Cane (Chioggia) Beets!
The New York State Education Department (NYSED) continues to offer the Fresh Fruits and Vegetable Program (FFVP) in our district. In addition to pears, green cauliflower, and oranges, the program will feature Candy Cane (Chioggia) Beets in the month of December! Don't miss out the opportunity to try this ridiculously healthy root vegetable! Not only are beets delicious, but they pack a good amount of gut-friendly fiber, vitamins and minerals. Enjoy them raw, roasted, boiled or steamed!
