The Weekly Bulli-tin
TERM 3 - Week 7
Principal's Report
Leadership
Leadership is a word used often in schools. One of our aims at Bulli HS is to build the leadership skills of all students, particularly through our Bulli 5 skills of collaboration, citizenship, communication, critical thinking and creativity. Students demonstrate their leadership in all sorts of ways and in various situations, including on the sporting field, in classrooms, in the playground and in the broader community.
Students who are elected to our SRC make a clear choice to lead their peers and to assist in leading decisions or changes needed throughout the school. Some are quiet and conscientious, others are loud and vocal, but all have the vision of school improvement.
This past week we announced our incoming 2025 student leadership team. Congratulations to Ike Stroud and Nadia Docherty (Captains), Christiaan Bresler and Ava Byrom (Vice Captains), and Theo Adams and Ethan House (Senior Executive). I am extremely excited to be working with these students over the next 12 months and are confident in not only their ability to lead, but their passion and vision for the school. I would particularly like to commend Blake Supplice, Caitlin Kennedy, Scott Hirst and Alecia Barclay. While they may not have received an official leadership role in the SRC for 2025, I know that they will continue to lead as exceptional students and people.
Congratulations
Congratulations to Eva McKay in year 9 who was successful in obtaining a position in the 2024 Australian Ballet Workshop this Friday at Tanya Pearson Studios, St Leonards. This event by The Arts Unit is a recognised activity of the NSW Department of Education. I look forward to hearing about Eva’s experience and wish her well.
I would also like to congratulate Liam Gammone in year 10 for his selection in the NSW state team to compete at the School Sport Australia Cricket Championships in Mackay. In their fixture against Queensland Maroon, Liam scored 49 runs off 65 balls. What an amazing effort!

Message from the Kitchens
Year 7 and 8 have rotated TAS subjects for the semester and we are seeing lots of new faces in the kitchens.
Mr May’s 8TEC09 cooked up some delicious dumplings and cheesy gozleme. I was very impressed with the students' technique in folding and pressing the perfect dumpling shapes below.
Year 9 Food Technology
Year 9 Food Technology started a new unit “Food product development” An ever-increasing variety of food products are available in the marketplace as a result of food product innovations. Students examine the reasons for developing food products and the impact of past and present food product innovations on society. They explore the processes in food product development and develop, produce and evaluate a food product.
Our most recent practical was our version of cold rock ice cream, the students had a variety of additional mix-ins which they had to decide how to incorporate into the ice cream - delicious! We also made pizza scrolls, making the dough ourselves.
Year 10 Food Technology
Year 10 started a new unit “Food for special occasions”. Food is an important component of many special occasions. Students explore a range of special occasions including social, cultural, religious, historical and family. They examine small and large-scale catering establishments. Students plan and prepare safe food for special occasions, demonstrating appropriate food-handling and presentation skills.
A fun practical experience so far was making mini pavlovas. Students discovered the art to creating perfect peaks and were quite shocked at the amount of sugar used to make these which led to a discussion that this is why it's a special treat item and not consumed often.
Year 10 also made some Tourtière French Canadian meat pies, these are a popular holiday dish, the students demonstrated some very creative designs for the tops of their pies.
Year 11 Hospitality
Our Hospitality Cookery students have been on work placement week 3 and 4 of this term.
The students must complete 70 hrs placement which is done over 2 weeks in year 11 and 12.
The work experience hours are mandatory for the Certificate II course.
We are so lucky to have many host employers who allow the students to work with them and gain valuable experiences.
Our host employers included Novotel, Outback steakhouse, His and Hers cafe, Resin, Shell's Diner, Salti Dog, Earth Walker, Thirroul Beach Pavilion and Bulli Beach Cafe - some students were offered casual work or have put their name down for the summer holidays.
While we visited the students, I was impressed by some of the comments. Cairo said "He has found a new appreciation for his time at school, as he has missed the time chatting to his mates this week". William said "He loves working and learning new skills and enjoys being busy".
I was so proud to see our students outside of the school setting putting into practice their skills and gaining valuable experience for any future employment.
A recipe favourite this term has been the butter chicken who can resist this, cheesy garlic naan bread from scratch as well as home made sauce.
We also made pork steamed buns making the dough from scratch and using the steam mode on our combi ovens.

Hospitality Work Placement
Year 12 Hospitality
While the students are working hard on individual tasks that need to be completed we have continued to cook.
A few highlights this term has been apple cobblestone cakes (see recipe below), poke bowl spinach and ricotta cannelloni and Mochi cupcakes.
Apple Cobblestone Cakes - Between 2
Method
1. Preheat the oven to 200C/180C. Line a large baking tray with baking paper.
2. Combine the flour, sugar and cinnamon in a large bowl. Add the butter and use your fingertips to just rub in so the butter is in slightly smaller lumps. Make a well in the centre.
3. Whisk the buttermilk, egg and vanilla in a medium jug. Add to flour mixture along with the apple. Use a non-serrated knife to mix together until the mixture is evenly moistened (it will be very sticky and wet)
4. Turn out onto a lightly floured surface and use floured hands to press out to 3cm thickness. Use a floured 6cm round cutter to cut out rounds, dipping the cutter in extra flour between cuts. Press off-cuts of dough together (don’t knead) and cut out more rounds. Use a knife (or a thin lifter if you have one) to carefully transfer rounds, just touching, onto the prepared tray. Brush tops with extra buttermilk.
5. Bake for 20 minutes or until golden brown. Use baking paper to transfer scones to a wire rack, then pull out the paper. Cool completely.
6. To make the icing, combine the icing sugar and custard powder in a bowl. Add the boiling water and stir until smooth. Drizzle over the cooled cakes and leave for 30 minutes to set. Serve

SRC
International Youth Day
SRC organised an event to commemorate International Youth Day. They arranged for teachers to recount stories from their youth and a sweet treat for their peers during break with a donut and slushy offering for all. Big shout out to Liam and Luke for coordinating this event.
Student Parliament
Student leaders from Bulli HS welcomed student leaders from Helensburgh, Otford, Stanwell Park, Scarborough, Coledale, Austinmer and Thirroul Public Schools for our first session of Student Parliament. The topic for discussion was sustainability within our homes, schools and the wider community. We were very fortunate to have Greg Knight of Electrify 2515 join us to also share in his knowledge and expertise in this area. All students shared their experiences generously and all went home with some ideas on how we can all do a little more to ensure the future of our planet.
Debating
Our incredible debating teams took on the competition at the University of Sydney last week. Their hard work and dedication is inspiring, and they represented us with skill and confidence. We will share our amazing results soon!

Audio Engineering
Our popular afterschool program Audio Engineering is back on this term at Stranded Recording Studio, Bellambi with Cody Munro.
Good luck to Penny, Jarvis, Luka, Paige and Hayden who have all taken up the challenge to learn the mysteries of an analogue desk. And perhaps earn future careers in the music industry.
Some students elect to use their time in the studio to record their own original music and soundtracks. Each to their own! We are always looking to release the best BHS music on our new BullsEye Records label.
Each 5-week Audio Engineering course is limited to only five students. For Term 4 enrolment enquires, contact multiversebhs@gmail.com. First in, best dressed.
ARE Media Surf Magazine
We are proud to announce that Bulli High is on track to release a professional-quality, 96 page glossy magazine in partnership with ARE Media on 2 December at Multiverse. A limited edition print run of 100 copies will be priced at $35 each with all proceeds directed to BHS Surf Academy.
The magazine will chronicle the rise of Bulli High surf culture from the heady days of Jake Spooner, Kim Wooldridge, Chad Ryan and Sandy Dryden to the more recent eras of Billie Melinz, Zoe Gelder and the emerging talents Jett Blue and Marlie Moston, among many others.
The photography of world-renowned Bulli High alumnus Ray Collins will feature alongside the work of Billie Acosta and Amber Cree. And most excitingly, our Year 10 photography students will appear under the guidance of the legendary Mr Tony Cabassi. Our most dedicated English students have worked on their articles and interviews for six months with journalist Megan Rowe interviewing the likes of Pam Burridge, Kim Wooldridge and Nic Squiers.
The magazine will release two important lists in the context of Bulli High history: The top 20 all-time BHS surfers who appear on a wooden commemorative board in gold leaf - and an Australian cricket team-style list of the 112 surfers who have ever competed for Bulli High.
Advance orders and sponsorship enquires can be made at multiversebhs@gmail.com

Surfboard Design Contest
The Bulli High Surfboard Design Contest has scaled this year into a NSW-wide competition.
In partnership with Hawaii-based AkuShaper, California-based Boardlams and NZ-based PocketQuiver, this Multiverse category offers prizes for TWO separate categories: Surfboard Engineers + Surfboard Artists.
• The winning shaper will have their 1980’s board design cut in Byron Bay and offered a 12-month online internship with AkuShaper San Diego as a surfboard engineer.
• The winning artist will have their 1980’s retro designs sold at Boardlams California and offered a 12-month online internship with AkuShaper San Diego as a surfboard artist.
Students may enter without charge via the AkuShaper website under ‘Events’:
We are proud to announce that our esteemed Bulli High School alumnus, elite junior surfer and board artist Zoe Gelder, has joined the AkuShaper competition as an Australian judge.
Look out for the designs of last year’s runners-up Ralfie Scott and Jett Blue who narrowly missed out on first place to Denim Budai in the shaping category.
For students who attend the best Visual Arts high school in NSW (which happens to share an ocean with Hawaii and California), this is your chance to get art designs onto the world stage. And monetise your talents in the United States.
Entries close on 1 November.
For any queries about the competition please contact multiversebhs@gmail.com.
