RECIPES & TIPS
Cucumbers
Our crew tried something different this year and made you a special salad with our cucumbers and dill. We enjoyed it with lunch and hope you find it as fresh and tasty as we did. Make sure to take it right home and pop it in the fridge as it will spoil.
Acorn Squash
One of my favorite recipe and food knowledge site, the Spruce Eats, has lots to say about the litt;e acorn squash. "Although considered a winter squash, the acorn squash is from the same family as summer squash, which includes zucchini. It is a botanical fruit which is treated as a culinary vegetable. Squash is native to the Americas. Thought to be the first food cultivated by Indigenous tribes, squash, along with beans and corn, is part of the Indigenous triad of the three most important food staples."
Not going to use your squash right away? It's important to know that winter squash will last up to a month in a cool, dark cellar or storage area, but about 2 weeks in the refrigerator. For best results, only cut or cooked acorn squash should be refrigerated.
Dill
Did you know that dill is part of the celery family? I did not!
This fragrant herb is delicate and works particularly well with eggs or in salads. To successfully store fresh dill, spritz whole stems lightly with a fine spray of water, wrap loosely in paper towels, and place in a sealed zip-top plastic bag. Store the dill in the vegetable bin of your refrigerator. It should last up to a week and perhaps even longer.
Rhubarb
Here we have another garden goodie that sees us asking the question - is this a fruit or a vegetable? Botanically, it’s a veggie, as it's grown for its edible foliage, not for its “fruit” (which are actually just dry seeds). However, it is commonly used cooked in desserts, so many people claim it as a fruit. In fact, it is called “pie plant” in some areas. In New York state, it has even been legally declared a fruit!
