A True Culinary Adventure!
I grew up in these beautiful mountains eating the typical homegrown summer garden vegetables for supper. Several times a week we would eat tomatoes, cucumbers, corn on the cob, onions, yellow squash, new potatoes and cornfield beans (greasy short cuts, my absolute favorite!) and a slice of cornbread. Delicious!
Last week, I just had to have some creamed corn. So I started with the important question, "How do you make your creamed corn?" I heard salt, butter, sugar, heavy cream, cornstarch or flour. The recipes varied with these ingredients. So I decided to experiment with a little bit of this and that. I must say, it was not that bad for the first batch in 10+ years. It may have been more like a corn chowder, but it sure was tasty over my buttermilk biscuit. Yes, I like it on a biscuit with a slice of red tomato on one side, a slice of yellow tomato on the other side and a few slices of green pepper. A late summer treat on the porch in our gorgeous mountains. Enjoy those fresh vegetables while they last! Frost in how many weeks????
